A method for the preparation of fish pickles from a lean variety of fish namely pink perch (Nemipterus japonicus) is described. Dipping the fish in 10% sodium chloride solution containing 6% acetic acid before pickling, was found desirable for retaining the meaty texture of the product. The product has no fish smell or flavour and has a shelf life of more than six months at ambient temperatures and scored very well in organoleptic tests.

Small-scale and artisanal fisheries contribute about two-thirds of the global fish production destined for direct human consumption. They also accommodate over 90 per cent of those who make their living from fisheries. Women comprise at least half the workforce in small-scale fisheries. Despite the important contributions made by small-scale fisheries to poverty eradication and food security, small-scale fishers and fishworkers continue to be marginalized at different levels. It is in this context that the Committee on Fisheries (COFI) of the Food and Agriculture Organization of the United Nations (FAO) has developed the Voluntary Guidelines for Securing Sustainable Small-scale Fisheries in the Context of Food Security and Poverty Eradication (SSF Guidelines).

The objectives of these Technical Guidelines are to provide a focus on small-scale fisheries and their current and potential role in contributing to poverty alleviation and food security by expanding on the guidance on small-scale fisheries offered by the Code. The Guidelines are complementary to existing Technical Guidelines for Responsible Fisheries. Most small-scale fishers are in developing countries and many live in communities characterized by poverty and food insecurity. Small-scale fishing communities are faced with an array of serious problems, including overexploitation and depletion of resources, lack of alternative sources of employment, rapid population growth, migration of populations, displacement in coastal areas due to industrial development and tourism, pollution and environmental degradation and conflicts with large commercial fishing operations. However, small-scale fisheries are critical for food security and poverty alleviation in many countries. The first part of the Guidelines discusses the current contribution, role and importance of small-scale fisheries in poverty alleviation and food security. It examines the importance of small-scale fisheries for poverty alleviation at a national, local and household level. It also notes the nutritional qualities of fish and thus the particular role of fish in nutritional aspects of food security. The fact that about half of all fish caught for human consumption comes from small-scale fisheries underlines the importance of this subsector for the world fish supply. In many countries small-scale fisheries contribute to national food security both directly – where fish is a crucial part of the daily diet, and indirectly – by generating foreign exchange earnings that enable the purchase through trade of a range of food products. The second part of the Guidelines explores ways through which the contribution of small-scale fisheries to poverty alleviation and food security could be enhanced. A vision for the future of small-scale fisheries is presented as a goal towards which the subsector should develop. Ensuring greater participation by small-scale fishers and their communities in the formulation of policies, the development of related legislation and regulations, and in management decision-making and implementation processes, is vital to the realization of this vision. The central role of effective fisheries management, the importance of considering cross sectoral uses of fisheries and related resources, the special role of women in fish marketing, processing and value addition, the significant scope for trade, the critical role that adequate financing may have in enabling transitions for effective fisheries management and the role of knowledge in making informed decisions are all discussed in these Guidelines. Landings of brown shrimp (Crangon crangon L.) for human consumption from the North Sea had reached a maximum in 2005. The German share was 16 485 tonnes, i. e. 44.2 %. However, German landings declined in 2006 and the question arose, whether effort reductions or a reduced stock caused this development. Logbook data, basis for the German fisheries statistics, have been analysed and revealed a first decline in LPUE (landings per unit effort) after a series of years with positive development.

Landings of brown shrimp (Crangon crangon) for human consumption are not the only part that is taken from the North Sea shrimp stocks. Small amounts of industrial shrimps taken in the second half of a year in Germany add as well to the total amount that is taken from the stocks as the moribund animals discarded all over the year during the first sieving process on board, as the cooked and discarded ones in the second sieving on board and as those from the third sieving process ashore normally being crushed and used for animal feed stuff. All these fractions of the total catch of brown shrimps give a total of approximately 74 000 tonnes that were taken from the North Sea in 2005. Nevertheless, due to low predator abundance and changing climate conditions Crangon stocks show no signs of overexploitation so far with increasing LPUE values in the north-eastern part of the German Bight and decreasing ones in the south-east and Channel. There is the need of further investigations of these changes in the life history and distribution of shrimp as well as in the fishing behaviour and effort of the shrimp fleets .

The German shrimp fisheries land different types of pro-duce. Besides cooked shrimp for human consumption small (undersized), raw shrimp (industrial shrimp) are landed regionally in the second half of each year for animal feedstuff purposes. They are dried in special plants and form sellable secession from sieving processes aboard shrimping vessels. Grading the cooked shrimp ashore gives the non-marketable fraction of too small shrimp, which is not meant for shelling. That fraction is produced all year alongside landings of shrimp and is used for feed-stuff as well. Both extra fractions are listed in the official statistics since 2000 for the first time. That year industrial shrimp made up 6 % of the total landings while the non-marketable, small cooked shrimp summed up to 7 %, respectively. Though being essential for specialised animal feeds they are commercially of very little value, making up to hardly 2 ‰ of the total turnover of the German shrimp fisheries.

The reduction of discards will only be achieved, if more effective methods of catch selection will be developed and used. In principle, the unavoidable by catch of commercial fish should be used for human consumption, independent of the requirements for minimum length and existing catch quotas. The amount of such bycatch should be charged to the total catch quota and preferably be used for processing of fish portions with skin (carcasses with skin), because this kind of processing results in higher yields and nutrional advantages compared to fillet processing. Unfortunately, nowadays, in the German fishery and fish trade this traditional form of supply is only of minor importance because of the predominance of fillets and fillet products. However, cooperation between fishing industry and fish trade and a good advertising of processed fish portions with skin could overcome this problem. In the pelagic fishery of herring, mackerel and other similar pelagic species the bycatch of small sized specimen of these species can be a problem. These small sized fish can principally be processed to traditional fish products, but the processing costs for them are much higher. The prospects for processing of the bycatch into minced fish meat, fish protein concentrate or fish protein hydrolysate are very poor under the existing regime in the German fishing industry. A further way for processing of the bycatch, which can not be used for human consumption, is the production of fishmeal. However, only three German factory ships dispose of fish meal plants. Under the current economic conditions, i.e. because of limited storage capacity, the Ger-man trawler and cutter fleet is not able to transport the bycatch for fish meal production ashore.

The worldwide aquaculture production amounts to about one third of the world fishery catch. While the world fishery catch in the last years is stagnating and an increase is not to be expected, the aquaculture rose by about 10 % annually. This rate of growth is also predicted for the next years. Fish meal and oil forms a key position for the further development of aquaculture, specially for carnivorous fish species, of which the salmonids will gain an increasing economic importance, not only on the European, but also on the Japanese and American markets. Without an adequate supply of fish meal and oil for the production of these fish species, the expected product quality cannot be realized under economic conditions. Fish meal and oil are commonly produced from small pelagic fish species, which, at present and in the near future, have no importance for direct human consumption. Since December2000 the use of fish meal and oil in Germany is only allowed for use in aquaculture and petfood. However, conclusive arguments for a ban on the utilization for other animal feeds do not exist so far. The European Union continues to allows feeding of other animals – except ruminants – with fish meal under certain control measures.

Lipophilic organic substances in the environment are nearly exclusive of anthropogenic origin. Input of contaminants to sea and fresh water lakes arise via rivers, the atmosphere, direct intake and disposals. Intake by fish occurs via diet or directly from the water. The contamination level in fish is influenced by the fishing ground, fat content, biological cycle and age of the fish. But the effect for fish as food is very limited. Levels of lipophilic organic contaminants in the edible part of fish important for human consumption are far below the German maximum allowable evels of residues and pollutants.

The fishery ministers of the EU agreed in their yearly pre-Christmas marathon session on 18th and 19th Dec. 1997 on next year’s TACs and country quota. Main decision was the increase of the TAC for North sea cod and a smaller than feared cut of cod TACs in the West of Scotland zone, the Irish Sea and the English Channel. For the first time ministers set country quota for horse mackerel; until 1997 there had been - with the exception for Portugal and Spain - only a common quota. Also for the much disputed sandeel fishery a TAC of 1 mio. t was finally established, as well as for bluefin tuna and swordfish in the Atlantic and Mediterranean. For 1998 the EU member countries dispose of a total catch quota of 4.46 mio. t in EU waters, and together with quota in third country waters of 5.2 mio. t. Of this total quota, 3.16 mio. t are fish for human consumption and 2.1 mio. t fish for industrial purposes.

The estimated potential of Nigerian fish resources is 1,830,994 tonnes(t) whereas the demand based on per capita consumption of 12.0kg and a population of 88.5 million is 1.085 million tonnes. Supply is presently less than 500,000 tons. The gap between demand and supply have to be met through improved utilization and increased availability of fish and fishery products. The role of fish in nutrition is recognized, since it supplies a good balance of protein, vitamins and minerals and a relatively low caloric content. This paper appraises the consumption and utilisation pattern of fish in Nigeria, the spoilage of fish and prevention of losses as a means of increasing the availability of fish for human consumption and consequent control of aggravated animal protein deficiency - induced malnutrition. The paper further highlights the point that without increased landings, increased supply of fish can be achieved through reduction of postharvest loss of what is presently caught. The use of newly designed smoke - drying equipment to achieve such goal is highlighted. The paper also emphasises the need to put into human food chain those non-conventional fishery resources and by-catch of shrimp and demersal trawl fishes by conversion into high value protein products like fish cakes, fish pies and salted dried cakes

Shellfish are a major but cheap protein source for human consumption as well as source of income for coastal towns and villages of the Niger Delta in Rivers State, Cross River, and Lagos States. A research into the nutritive value of some of these marine shellfish viz: bivalves (oyster - Crassostrea gasar and cockle - Anadara senilis); gastropods (periwinkle - Tympanotonus fuscatus, obtuse periwinkle - Semifusus morio and the giant whelk - Thais callifera) and mangrove crabs (green crab - Goniopsis pelli, ghost crab - Cardisoma ormatum, and common blue crab - Callinectes latimanus) was carried out to compare their quality and cost with beef, chicken meat, pork and egg in order to identify those most suitable for commercial culture. Results show that all shellfish had at least 16% crude protein except blue crab (13.38%). All shellfish had higher protein content than egg (13.36%). Cockle with protein content 25.47% compared favourably with beef, (29.60%). Beef, chicken meat and pork cost 11.50, 9.00 and 8.00 per kilo respectively while oyster, periwinkle and the common blue crab cost 3.50, 3.00, and 1.50 per kilo respectively. Oysters and Cockles are recommended for commercial culture based on the findings of this research

Total world fishery production 1995, including aquaculture, of fish, shellfish, frogs and turtles – reached a new record of 112.9 million tones live weight. Marine fishery had a share of 91,9 million tonnes (+ 0.4) and freshwater fishery 21.0 million tonnes (+ 2.0). Not included in these figures are seals, whales, crocodiles and algae. Marine mammals and crocodiles are listed by number of killed individuals, and not given by weight. Algae alone represent a biomass of 7.1 million tonnes, but are not included by the FAO in the nominal „total production of the world“ either. About two thirds of the marine fishery harvest was used for human consumption, one third for industrial purposes – mainly production of fish meal and fish oil.

North-Sea whiting shows a much shorter shelf life in melting ice than other gadoid fishes like saithe, cod and haddock. It can be stored for a maximum of 14 days in ice before being rated as unfit for human consumption. Appropriate freshness indicators for whiting are: sensory tests, dimethylamine- and trimethylamine oxide-nitrogen, creatine content. Of most value for whiting is the determination of thc electric resistance by the fishtester VI.
